A process built to scale
As part of the HatchTrack™ incubation process, entrepreneurs develop their F&B concept and connect with consumers, investors, mentors and chefs to help them along the way. Hatchery can support business model planning, market entry and brand strategy, supply chain management and food safety and quality testing.
Here is where it all begins. An idea evolves either based on a niche we discover in China's food and beverage market, or is brought to us by an entrepreneur or business. In Track 1 we explore market opportunities, create business proposals and begin testing the concept.
In Track 2 we test the concept or product, carrying out work with focus groups, training staff and launching pop-ups. Based on feedback, we can refine both our business plans and the concept itself, which includes creating the branding around it.
In this stage, a product is launched at one of our Hatchery Destinations for 3 months. Throughout this duration we refine our menus, thoroughly train staff and build up a base of customers, all in preparation for launching the product as an independent business. This stage of the HatchTrack process allows us to identify and deal with any problems that could affect the concept as a real world business.
Track 4 is all about scaling up the concept into a viable business and we seek to do this by rapidly opening stores both within and across cities in China. In this stage we bring together investors, use crowd funding, work with our property partners, train staff and take a hands on management approach to help smoothly launch your brand.

Bird On a Wire
Feeding the world better food
This is Bird On a Wire's first venture internationally and Hatchery’s first SME partnership to validate a pre-existing food concept in China. Hatchery allows growing businesses like Bird On a Wire to test their concept in front of Beijing's millennial consumers before committing substantial resources to grow in China. We love what Bird On a Wire do as leaders for ethically-sourced chicken in New Zealand, and believe there is an exciting opportunity for them here, especially as Chinese consumers demand more transparent food supply chains.
Food for the people
Our menu is inspired by the classic Commonwealth flavours of our homelands and we use high quality ingredients and a little love to make our great burgers from scratch. We're driven by wanderlust, multiculturalism and the daily pulse of people all over the world. We've partnered with local suppliers and importers to get the best produce, and all of our patties, pickles, preserves and sauces are made in-house.

Coop’s menu highlights potentially Hatchery’s best find yet, Chicken Sanctuary, a small-batch farm in Beijing. They process and monitor each chook's diet ensuring top quality free-range eggs - with over twice as much vitamin E and omega-3 as their caged counterparts! The dishes you'll find are simple, with the focus on high-quality ingredients and perfectly executed dishes.
Canteen benefits your health, mind and soul!
A new concept in Beijing, Canteen pays homage to long days surfing fuelled by beach-side bowls packed with fresh produce, healthy ingredients and punchy flavours. Smoothie bowls, Hawaiian-inspired poke, a variety of salad and rice-based dishes, sandwiches and soups all feature on the menu. Wash it all down with freshly squeezed fruit juices, artisan coffee and tea.
The tastiest seafood to Beijing
The saltiest of seadogs who traveled the South Pacific in search of the world's finest seafood. Over his years of buccaneering, he found the New Zealand green-lipped mussel to be supreme and spent his remaining years in the Antipodes dodging pirates and perfecting the mussel pot. In his quest he found crafty beers to be the heartiest accompaniment and we are proud to bring the spoils of his years of toil and seafaring to the bows of Beijing.

Common Burger: A Case Study
Our newest brand that we have brought to life in Beijing!
Everyone here at Hatchery loves burgers, but found ourselves at a loss as to where to get a good, high quality one in Beijing. After some brainstorming, we decided to try out a burger restaurant inspired by the flavours and ingredients of our homelands in the Commonwealth.
Having drawn up a business plan and settled on a menu of burgers and boozy milkshakes, we arranged tastings with both foreign and expat focus groups. With great feedback, we set about creating a more detailed business plan before moving on to Track 3.
In February 2017 we launched Common Burger at our Dongsi location for 3 months. Over the duration of the residency we refined the menu based on customer feedback, reduced costs and boosted revenues. Having proven itself a great success, we decided to open Common Burger as an independent business.

Canteen: A Case Study
The first smoothie and poke bowl concept in Beijing
Inspired by surfing trips to Bali with beachside smoothie and poke bowls, discussions initially centred around the idea of bringing a slice of paradise to Beijing in the grey winter months with healthy and hearty food.
Community tastings were held with foreign and local consumers, and expatriate media organisations. On the back of menu development, positive budget projections, and great feedback, the decision was made to proceed to Track 3.
Canteen popped up in four different locations while in Track 3 - Hatchery Tuanjiehu, The Bookworm, Jing-A and Hatchery Dongsi. At each location we refined the concept, and with every pop up proving popular than the last, Canteen was moved into Track 4.
As part of our concept validation process we trialled Canteen at Jing-A Brewery, which allowed us to test what service styles, products and locations are best for Beijing. We kept the healthy vibe, but changed to a serve yourself, pay by weight model, and also offered a range of baguettes and baked goods. Subsequently, 'Build Your Own Bowls' were introduced, which proved very popular in spite of the location not being suited to a fast casual offering. This trial helped us refine the menu offering of Canteen and help drive the concept forward.
Real world results
A West African dining concept
We helped conceptualise, test, validate and develop this West African dining concept. The results encouraged the owner to refine their menu for Chinese palates and expand the brand's story, as well as understand which demographics to target.
An Australian craft brewer
Our use of focus groups allowed this Australian brewery to decide which would be the most appropriate beers to sell in China. Through our analysis, we were able to advise on how to raise brand awareness in China and strike a chord with Chinese customers looking for high quality beer and cider.

Stew is a serial entrepreneur with China startup and growth stage experience in both education and hospitality industries. With fluent Mandarin, he is passionate about innovative business models, operations systems and investment strategy. Stew likes the finer things in life and you’ll often find him sipping whiskeys and nibbling on cheese, until he finds the next great Chongqing hotpot.
Alex has a background in corporate agribusiness, hospitality, startups and marketing. Alex balances corporate business with startup interests in China, believing both large and small businesses can learn more from each other. When he’s not with his young family or enjoying New Zealand wine and produce, he’s focused on driving Hatchery management, operations and marketing.
Chris is an experienced international business development professional specialising in mergers and acquisitions, business strategy and technology. He's overseen over US1 billion in acquisitions in the agriculture sector and is currently completing his studies in Artificial Intelligence at Stanford University. Chris is an avid vinyl collector (with well over 2000 records) and DJs under the moniker Brother Ping.
General Manager - Beijing
Ben is a multi-talented consultant with experience in the legal, financial and hospitality sectors. Last year, he opened Chongqing’s first large-scale gastropub after a stint in the corporate world in Singapore. Ben’s love for hospitality has driven him to Hatchery where he helps entrepreneurs achieve their dreams and where you’ll also find him waiting tables and mingling with diners.
Food Ops Manager
Chef Simone Thompson is an Australian native, who’s spent the last eight years working in various kitchens and restaurants across London - notably at Barrica which was awarded a Bib Gourmand in 2016 with Simone as head chef, and at The Marksman - Michelin Guide’s UK pub of the year.
Eva is experienced in corporate governance, executive assistance and communications having previously worked with Huishan Dairy and most recently with Fonterra’s International Farming division based in Beijing. Eva supports Hatchery’s new locations and projects in Beijing, as well as contributing to marketing communications
Li Jingyang hails from the northern city of Harbin in Heilongjiang province. He's previously established an import/export and warehouse logistics company and brings his operational expertise to the Hatchery management team.
Tony gets things done. He’s in early, out late and runs the kitchen during service. You’ll often find him belting out songs at the top of his lungs in the kitchen, and he loves exploring new western cuisines.
Dave has over fifteen years culinary experience in both commercial and professional kitchens in New Zealand and Australia. He's passionate about food safety and has degrees in food science and brewing.
Grace is a talented corporate lawyer who enjoys balancing big business with startups and growing food businesses. Originally from Sichuan, Grace calls Beijing home and enjoys travelling the world in search of new tastes and sights.
Elisa is an experienced interior designer with a design background from Panama, Paris, London, Hong Kong and more recently Beijing. Elisa speaks five languages and has a passion for furniture design.

Hatchery Reward Program Terms and Conditions
You affirm, represent and warrant that you are at least 18 years of age (or have your parents’ or legal guardian’s consent), and are fully able and competent to enter into these terms and conditions and to abide by and comply with them. You agree to provide complete and accurate information as requested by Hatchery, such as when registering your HRP Account with Hatchery, including your real name, mobile number, date of birth and email address. You also agree to maintain and promptly update your HRP Account information to keep it accurate, current and complete.
To register your HRP Account, simply follow us on WeChat by scanning our HatcheryIncubator WeChat Public Account QR Code or by searching our WeChat ID – HatcheryIncubator. Click “Register” in the “Member” area on the menu bar and a registration form will appear for you to complete. That will also display and/or link to the full terms and conditions. By clicking the “Submit” button, you will acknowledge that you have read these terms and conditions, understand them, and agree to be bound by them. If you do not agree to these terms and conditions, please do not continue with registration.
We welcome new and existing customers to join the Hatchery Reward Program. HRP is our way of saying thank you to our loyal customers.

HRP Points Redeem
To receive HRP Points, you must present and scan your unique membership QR code at participating Hatchery restaurants including Hatchery Dongsi Restaurant and Hatchery Arcade Guomao Restaurant. Hatchery reserves the right to remove points from your HRP Account if purchase that resulted in earning points is reversed for any reason, such as because of a dispute or a return of the purchased product.
You will start to accumulate HRP points upon registration, but only could redeem points after you have become at least H1 Member (level of redeem access is dependent on Membership Level). You may check your points balance from “Member Center” in the “Member” area on the menu bar of our HatcheryIncubator WeChat Public Account. Once you are H1 or H2 or H3 member, to redeem HRP Points for reduction of bill when purchasing full priced items, inform our Service Staff you would like to redeem your points, and scan your My Virtual Card (a unique membership QR code automatically generated upon successful registration) at our POS machine, then our Service Staff will be able to see in the system your points balance and help you redeem.
Usually the HRP Points are intended to be used when paying for for full priced items, not redeemable together with other promotional deals in restaurants.
Pay from Prepaid Balance
If you have chosen to prepay for certain amount to enjoy extra promotional benefits defined under “Prepay充值- Member Center” in the “Member” area on the menu bar of our HatcheryIncubator WeChat Public Account, please note below: inform our Service Staff you would like to use your Prepaid Balance, and scan your My Virtual Card (a unique membership QR code automatically generated upon successful registration) at our POS machine, then our Service Staff will be able to see in the system your prepaid balance and help you the balance. For the security of your Prepay Account, each time you use the prepaid balance, you will be required to input your Pin Code. You are solely responsible for the activity that occurs on your Prepay Account, and you must keep your Pin Code for security. Please note, with the Prepay promotions, you earn the benefits right away, therefore HRP Points will not be accumulated later when your prepaid balance is used every time.
Use Membership e-Coupons
You will receive different levels of membership e-coupons (dependent on your Membership Level). You may check your e-coupons from “eCoupons” in the “Member” area on the menu bar of our HatcheryIncubator WeChat Public Account. If you would like to use one of the e-coupons, please inform our Service Staff you would like to use your e-coupon, and scan your My Virtual Card (a unique membership QR code automatically generated upon successful registration) at our POS machine, then our Service Staff will be able to see in the system your e-coupons and help you use one of them at one time.
Usually the e-Coupons are intended to be used when paying for for full priced items, not redeemable together with other promotional deals in restaurants. Only when the specific rules of the e-Coupon allows access of multiple coupons or use of multiple coupons at one time.
There are no membership fees associated with HRP. Points in your HRP Account are complimentary, have no cash value and will expire and be removed from your HRP Account one year after they are earned if not redeemed prior.
HRP has a constantly evolving list of member rewards. Hatchery reserves the right to modify these member rewards at any time at its discretion and without obligation, except as described in the “Modification” section.
You automatically become a Member Level member when you successfully register your HRP Account, which entitles you to receive below member rewards*:
- 20RMB coupon valid for minimum spend of 50RMB upon registration, valid for 60 days, not redeemable together with other promotional deals;- Receive 50RMB coupon 7 days before your birthday, valid for minimum spend of 100RMB, expire after 14 days;

Hatchery reserves the right to modify these terms and conditions at any time at its discretion and without obligation, except as described in this “Modification” section. It is your responsibility to review www.hatchery.asia regularly for any changes to these terms and conditions.
If you use your My Virtual Card after the effective date of the modification stated in the notice that Hatchery posts or sends by SMS, your first use of the My Virtual Card after that effective date will be your agreement to the modification. If you do not agree to a modification in such notice, you should use your e-coupons before the earlier of their expiration date or the effective date of the modification stated in the notice. Then you should stop using your My Virtual Card.
You should use your e-coupons before their expiration date. Please note that you cannot enjoy the benefits of your e-coupons without using the Hatchery Reward Program.
Hatchery reserves the right to terminate the Hatchery Reward Program (either nationwide or in one or more cities within China) and/or these terms and conditions at any time at its discretion and without obligation, except as described in this “Termination” section. Hatchery will provide reasonable advance notice by sending an SMS to the mobile number listed on your HRP Account or posting a notice on www.hatchery.asia terminating the Hatchery Reward Program, unless Hatchery is unable to provide advance notice in order to comply with any applicable law, rule or regulation. It is your responsibility to review www.hatchery.asia regularly to see whether the Hatchery Reward Program has been or will be terminated.
Hatchery may also terminate your HRP Account if you fail to comply with your obligations under these terms and conditions or you use your HRP Account in a manner that violates any applicable law, rule or regulation. If Hatchery terminates your HRP Account, you will no longer have any points or e-coupons in your HRP Account or to be able to use your HRP Account. Since all benefits are complimentary, you will not be entitled to any refund in connection with any points or e-coupons.

Governing Law, Dispute Resolution
Any dispute arising from or in connection with the Hatchery Reward Program shall be submitted to Beijing International Economic and Trade Arbitration Commission for arbitration.
“Account Anniversary” means, for the HRP Account you create, each 12-month anniversary of the date when your 1st post-registration in store purchase occurred.
“China” means, for purposes of these terms and conditions, the People’s Republic of China, excluding Hong Kong, Macau and Taiwan.
“Eligible Payment Methods” means cash, bank debit cards, bank credit cards, personal checks, and such other payment methods as Hatchery may designate from time to time as being eligible to result in the recording of purchases to HRP Accounts. “Eligible Payment Method” will not include redemption of e-coupons, physical coupons, prepaid cards, gift cards, gift certificates, in-kind exchanges, use of a credit issued to resolve a dispute or for any other reason, or any other payment methods (including those listed in the preceding sentence) that Hatchery may designate from time to time as not being eligible to result in the recording of purchases to HRP Accounts.
“HRP Account” means a Hatchery Reward Program Account.
“My Virtual Card” means the unique membership QR code generated post successful registration.
“HRP Communications” means communications by e-mail, mail to your mailing address, telephone or mobile phone by HRP, its affiliates or vendors:
(i) contemplated by the terms and conditions (including the benefits described above);
(ii) related to your HRP Account and/or the Hatchery Reward Program;
or (iii) targeted exclusively to some or all of the customers with HRP Accounts.
“Purchase” means a purchase of full-priced Hatchery product in the amount of at least 1 Chinese Yuan using Eligible Payment Methods at participating Hatchery restaurants in China.

The information covered by the Policy includes, but not limited to, the personal information collected through the services available on our website located at www.hatchery.asia, and the Hatchery Reward Program, the personal information collected from the communication and exchange platform built on the application of network and mobile technology (e.g. social media).

Hatchery only gathers personal information, such as, first and last names, phone numbers and birthdays, when voluntarily submitted by you.
2. Sharing of Personal Information
Hatchery may share personal information within the Hatchery Family. The Hatchery Family includes Hatchery and our affiliates. Any use of this information by the Hatchery Family will comply with this Policy.
3. Security of Personal Information
Hatchery takes proper administrative measures and technical means to protect the security of your personal information and prevent them from unauthorized search, disclosure and loss, leakage, damage and distortion. Hatchery, the Hatchery Family member, employees of Hatchery Family, business partners of Hatchery and all third parties who are permitted to collect your personal information pursuant to this Policy, are required to comply with the duty of confidentiality.
