Stew is a serial entrepreneur with China startup and growth stage experience in both education and hospitality industries. With fluent Mandarin, he is passionate about innovative business models, operations systems and investment strategy. Stew likes the finer things in life and you’ll often find him sipping whiskeys and nibbling on cheese, until he finds the next great Chongqing hotpot.
Alex has a background in corporate agribusiness, hospitality, startups and marketing. Alex balances corporate business with startup interests in China, believing both large and small businesses can learn more from each other. When he’s not with his young family or enjoying New Zealand wine and produce, he’s focused on driving Hatchery management, operations and marketing.
Chris is an experienced international business development professional specialising in mergers and acquisitions, business strategy and technology. He's overseen over US1 billion in acquisitions in the agriculture sector and is currently completing his studies in Artificial Intelligence at Stanford University. Chris is an avid vinyl collector (with well over 2000 records) and DJs under the moniker Brother Ping.
Grace is a talented corporate lawyer who enjoys balancing big business with startups and growing food businesses. Originally from Sichuan, Grace calls Beijing home and enjoys travelling the world in search of new tastes and sights.
Elisa is an experienced interior designer with a design background from Panama, Paris, London, Hong Kong and more recently Beijing. Elisa speaks five languages and has a passion for furniture design.
With over fifteen years culinary experience in both commercial and professional kitchens in New Zealand and Australia, Dave leads Hatchery food and kitchen operations. Passionate about food safety, Dave has a degree in food science and brewing, and when he’s not cooking, you’ll find him with a craft beer in one hand and a surfboard in the other.
Beijing General Manager
Ben is a multi-talented consultant with experience in the legal, financial and hospitality sectors. Last year, he opened Chongqing’s first large-scale gastropub after a stint in the corporate world in Singapore. Ben’s love for hospitality has driven him to Hatchery where he helps entrepreneurs achieve their dreams and where you’ll also find him waiting tables and mingling with diners.
JJ runs the front of house and concept operations for Hatchery. After leaving the finance world in London, he’s quickly made Beijing his home and is well known for his quick wit and warm hospitality. JJ is a keen tennis player, food aficionado and loves to cook.
Andrew left the technology industry to join Hatchery and drive marketing and communications. Passionate about offline and online marketing, he loves delivering memorable experiences for diners and in his spare time runs food pop-ups and DJs around Beijing.
Food Operations Manager
Chef Simone Thompson is an Australian native, who’s spent the last eight years working in various kitchens and restaurants across London - notably at Barrica which was awarded a Bib Gourmand in 2016 with Simone as head chef, and at The Marksman - Michelin Guide’s UK pub of the year. As the mastermind behind Common Burger's menu and beloved stout syrup, she’s passionate about all things pickled, fermented, baked, crisped and cured, and has recently joined the Hatchery culinary team in 2017.
Li Jingyang hails from the northern city of Harbin in Heilongjiang province. He's previously established an import/export and warehouse logistics company and brings his operational expertise to the Hatchery management team.
Jingyang is passionate about art and literature, and is also an accredited and experienced Mandarin Chinese teacher.
Tony gets things done. He’s in early, out late and runs the kitchen during service. You’ll often find him belting out songs at the top of his lungs in the kitchen, and he loves exploring new western cuisines.
Michelle joined the Hatchery team in early 2016 and has worked her way up into the Assistant Manager role. She's a quick learner and a team player. Michelle describes herself an independent thinker and enjoys travel, film and singing in her spare time.
Cassie has been working in the F&B industry since 2012 and has worked at American hotels & restaurants, a Canadian deli, Italian restaurant & more. She makes sure to deliver amazing diner experience and says she can remember everyone's food preferences! Cassie is serious, but casual; loves indulging on food and always goes out of her way for customers.
